
This is a (very) quick and easy pasta sauce that takes less than a minute to cook from start to finish. Ideally you should get it together in the last minute or so of your pasta boiling time, so you can just dump the pasta in the sauce once it’s done.
Unlike many commercial sauces it doesn’t drown the pasta in gloop, just coats it — which is how it should be — and it’s very, very tasty.
INGREDIENTS
1 tablespoon tomato purée
1 tablespoon pesto
2 teaspoons butter/marg
A pinch of dried Oregano
(SERVES TWO)
YOU WILL NEED
A large Pyrex or oven-proof bowl (preferably glass)
A microwave
OPTIONAL
Ground black pepper
Fresh or dried Parmesan
DO IT
1. Put the tomato purée, pesto and butter in the bowl and blast on full power in the microwave for 10 seconds.
2. Remove the mixture from the microwave and stir everything together.
3. Blast in the microwave for another 15 seconds, take out and stir and give it a final blast for 10 seconds.
4. Add the oregano and stir.
5. Dump the pasta in the bowl and thoroughly mix it all up until the pasta is coated with a good orange colour and there are no lumps of sauce at the bottom (this is why a glass bowl is best).
6. Season with Parmesan/pepper as needed and serve.
It’s that easy. If you want to be a bit flash you can add a tablespoon of Mascarpone to the ingredients but it does do the trick as is.
WARNING: Once microwaved the sauce dries up quickly, so make sure you prepare it literally a minute before you add the hot cooked pasta.
