INGREDIENTS
225g green lentils
55g butter
1 large onion
2 – 3 cloves of garlic
2.5 cm fresh ginger, grated
1 red chilli, chopped
150ml double cream
3 tomatoes, peeled, deseeded, chopped (Douse in boiling water 10 secs, then cut slits in tomatoes, and then peel – easy!)
1 heaped T chopped fresh coriander
salt / pepper

DO IT
1. Put lentils into large saucepan, cover with plenty of water, boil, then simmer for 20-30 mins until tender.

2. Meanwhile melt the butter in frying pan, add onion and fry over low heat until golden brown.

3. Add garlic, ginger, chilli and fry for 2 minutes.

4. Stir in the cream, scraping any sticky sediment from the base of the pan,
add tomatoes and coriander and season with salt & pepper. Simmer gently
for 10 minutes.

5. Stir in the cooked lentils, reheat and adjust seasoning to taste.

6. Serve with rice or use as a filling for pie or crumble.
