100g brown sugar
100g butter
2.5 tablespoons of Golden Syrup
200g self-raising flour
1 tablespoon of ground ginger
1 heaped teaspoon of ground cinnamon
Half a teaspoon of nutmeg
1 egg

DO IT
1. Mix the butter and sugar together until creamy — use a blender or mix vigorously by hand after letting the butter melt a little — or stick it in the microwave for 30 seconds.

2. Add the spices, Golden Syrup and the flour (use a sieve for the latter).

3. Beat the egg in a separate bowl and add half of it to the mixture.

4. Grease a baking tin and pre-heat the oven to 200 deg C (gas mark 5). Put the mixture in the tin and bake for 15-20 minutes.

5. Cut into fingers or random chunks before it cools.
